This yummy pumpkin protein bread recipe was inspired by a girl named Lex Herrington on Instagram (@lexherrington)! Of course I had to make a vegan version of it, would you believe this whole loaf has only 210 calories and 20 carbs?!?! And it’s delicious af!
For the recipe you will need:
– 1 scoop of PEScience Vegan Select Protein in Vanilla Indulgence
– flax egg (15g really well blended flax seeds mixed with warm water, let rest for 20min)
– 10g Myprotein Instant Oats in Vanilla Flavor
– 60g pumpkin puree
– 1 tsp baking powder
Mix everything together, add plant milk/water for consistency if necessary, pour over a lined loaf pan and cook in 175 degree oven for 15-20min. Top with PB and jam! So freaking delicious!
